Baked Cajun Tilapia with zucchini

Quick and easy, this one sheet dinner will wow your family.  In and out of the kitchen in around 30 minutes

Cajun Spice

  • 3 TBL Paprika
  • 2 tsp Salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 2 tsp black pepper
  • 1 tsp red chili powder
  • 1 tsp dried oregano


  • 4 Tilapia fillets
  • 2 TBL Butter melted


  • 2 medium zucchini
  • 2 TBL butter melted
  • salt to taste
  • pepper to taste


  1. Preheat oven to 400°.  Cover a large baking sheet with foil. Set aside.

  2. Mix cajun spices together and set aside.

  3. Rinse and dry tilapia.  Place the tilapia on the foil lined baking sheet and brush one side with melted butter. Sprinkle about half of the cajun spices on the fish and then rub it in.  Flip the tilapia over and do the same on that side.


  1. In a medium to large bowl, melt the 2 tablespoons of butter.

  2. Slice the zucchini length wise.  Then slice it again.  You will end up with 4 long pieces.  Cut those in chucks of about 1 inch thick.  Place them in the butter, add salt and pepper and stir.  

  3. Place the zucchini on the baking sheet around the tilapia.

Tilapia and Zucchini

  1. Bake about 7 minutes and then flip.  Bake another 7 minutes or until the fish is flakey.

Recipe Notes

You may have extra spices left.  Place them in a jar and keep it for future recipes!
