Jambalaya with Shrimp and Crispy Chicken Wings

Jambalaya is full of so much flavor. Add shrimp and crispy chicken wings for the best jambalaya ever.

  • 3 TBL Olive Oil
  • 1 medium onion chopped
  • 1 14 1/2 ounce can chopped tomatoes
  • 1 cup chicken broth
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp onion powder
  • 1 package Zatarain's Original Jambalaya Mix
  • 1 lb large shrimp peeled and deveined
  • 6 chicken wings
  • 2 TBL parsley chopped (optional)


  1. Mix salt, pepper and onion powder and rub on chicken wings. Heat oil in a dutch oven or other heavy pan. Place chicken wing pieces in the oil and fry until dark on each side (about 5 minutes each side). Remove from pan and place on a plate for later.
  2. Place onion in the dutch oven and saute until translucent (about 5 minutes).
  3. Stir in tomatoes, chicken broth and Jambalaya mix. Bring to a boil and then reduce heat to a simmer, cover and cook for about 15 minutes.
  4. Stir in shrimp. Place the cooked chicken wings on top of the rice mixture, cover and cook for about 10 minutes longer.
  5. Let rest about 10 minutes.
  6. Sprinkle with parsley, if desired.
