Broccoli Bacon Salad

Broccoli salad is the perfect side dish.

Ingredients

  • 8 slices bacon we use Smithfield
  • 9 cups fresh broccoli Cut into florets
  • 1/2 purple onion chopped
  • 1 cup grated sharp cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Dressing

  • 1 cup mayonnaise no substitutes
  • 1/2 cup sour cream
  • 1/2 cup white sugar or less
  • 1 tablespoons 1⁄2-2 cider vinegar

Instructions

  1. Fry the bacon; break into pieces; set aside.
  2. Trim broccoli stems, cut into 1/2 - 1-inch pieces; cut flower ends into small pieces, too; put into a large serving bowl.
  3. Add chopped onion, cheddar cheese, salt and pepper.
  4. Add bacon (you can wait to add the bacon until just prior to serving)
  5. Add bacon now or wait until serving time if you don't like it to get soggy-ish.

DRESSING: Mix dressing ingredients in a small bowl until sugar dissolves.

  1. Add dressing to broccoli mixture and mix well.  

  2. Refrigerate or serve right away
