A moist and naturally sweet cookie.
Preheat oven to 325 degree F. Grate the apples and place in a medium sized bowl.
Add the oats, raisins and 3/4 of the almonds. Stir to mix
Pour the melted butter over the mixture and add the salt. Stir well.
With dampened hands, knead the batter a few times to get it to form together.
Again using damp hands, make 12 balls. Place on a cookie sheet that is lined with parchment paper or a Silpat.
Press the balls down little to flatten out the cookies. Sprinkle the remaining almonds on top of the cookies.
Bake for 30 minutes or until golden brown.
Remove from the oven and let them cool on a wire rack.
Store in the refrigerator. These cookies will freeze well.
