Roasted sweet potatoes and apples go so well with any dinner.
Fall is here and that means it is apple season. Cooking with apples is one of my favorite things to do. Many times when I think of cooking with apples, my mind goes to sweet foods.
There are over 2500 different types of apples, so I decided to go with a savory dish. Well, I suppose this is not really that savory. The roasted sweet potatoes and apples both impart a sweet flavor to this dish, but it is a side dish.
Apples have so many health benefits too. Here is a quick list of some of the benefits of eating an apple a day:
- Whiter brighter teeth
- Avoid Alzheimer’s
- Avoid Parkinson’s
- Cut your risk of cancer
- Cut your risk of diabetes
- Have a healthier heart
- Detox your liver
- Control your weight
- Boost your immune system
Now that you know how good apples can be for you – lets get in the kitchen and start cooking. Please note, the cooking times may vary. If you cube your sweet potatoes smaller than I did, the cooking time may be shorter. Check the potatoes for doneness by poking them with a fork.
Roasted Apples and Sweet potatoes
The perfect savory side dish for any meal
- 2 large sweet potatoes peeled and cubed
- 4 apples (I use a sweet/tart apple) cored and cubed
- 2 TBL Extra Virgin Olive Oil
- 2 tsp fresh thyme (or 1 tsp powdered thyme)
- 1 tsp salt (or to taste)
- 1 tsp fresh ground pepper (or to taste)
Preheat oven to 450 degrees F.
Place sweet potatoes in a bowl and add the oil, thyme, salt and pepper. Stir well
Pour the sweet potatoes on a large cookie sheet and place in preheated oven. Bake for about 20. Check the potatoes to make sure they are almost cooked through.
Add the apples and stir to coat the apples. Bake another 10 minutes.
