How is it that a week can fly by so quickly? I have to admit, I just finished planning my menu! I normally take time on Sunday to go through my coupons and the sale papers an plan my menu. This Sunday, I was just too tired! You see, my Mother had come for a 10 day visit and we were busy running around being tourists. It was a great “staycation” and I enjoyed her visit very much.
Back to normal life now!
The weather is heating up and I am busy finding recipes that don’t require me to be in the kitchen for a long time! I love to use my slow cooker in the summer. Of course, salads make a great hot weather meal too!
My goal for my evening meals is to keep them at around $5.00. The meals include protein, starch and a vegetable or fruit. The majority of the $5.00 goes to protein. I keep my cost to $2.50 or less for protein and use the rest on the sides. I use fruit and vegetables that are in season and do my best to purchase from our local farmers. Right now, strawberries are on sale, so we will have those often this week. Avocados are on sale in my area, so those will be on the menu too! I love them!

Monday: Cheese Tortellini Primavera ($5.00 meal, Meatless Monday)
Tuesday: Slow Cooker Red Beans and Rice, cornbread
Wednesday: Cream of Asparagus Soup, french bread, green salad
Thursday: Apple Tuna Salad in an avocado half, fruit for dessert ($5.00, meal)
Friday: Microwave Shrimp Primavera
Saturday: Fish sandwiches, homemade fries
Sunday: Roast Chicken, roasted carrots, rice ($5.00 meal – the chicken will be used for two meals)
