Menu Plan Monday #45
Last week had it’s ups and downs. I felt like I had caught up to so many things that I had let slide while my Mother was here visiting. Feeling caught up on blogging meant that I could get a few things done in the garden and in the house.
It has been so hot here! Is it hot where you are? I make sure that I get up early in the morning (not my favorite thing to do!) so that I can pull a few weeks, dead-head a few flowers and walk my dog before the heat wears me out!
As you know, I have been paying more attention to the cost of my meals. My goal is to make all of my suppers cost around $5.00 per meal. Yes, you read that right, $5.00 for a protein, carbohydrate and vegetable or fruit. I have spoken about how I am not looking for proteins that cost under $2.50 per pound. Veggies and fruit should cost around $1.50 per pound and carbohydrates should take up the rest of the $5.00. These meals are for 4 people!
So, with that said, here is my Menu Plan Monday #45
Monday – Ravioli with Corn and Arugula (Meatless Monday)
Tuesday – Homemade spaghetti sauce with pasta, french bread, green salad
Wednesday – Tex-Mex Taco Pasta, green salad, fruit
Thursday – Grilled Tilapia, almond sesame quinoa, watermelon
Friday – Black bean burritos, fruit salad
Saturday – Grilled burgers, fries
Sunday – Grilled chicken thighs, potato salad, Red, White and Blueberry Salad
