Life is busy, no matter what stage of it you are living. When I homeschooled my daughter, we were always running from one event to another. Girl Scouts, 4-H, Tae-Kwon-Do, Dance and more were regular parts of our life. It was important to stay as healthy and energetic as possible to keep up with all of those activities.
Tuesdays were different. On Tuesdays, we slowed down and enjoyed what we liked to call, “Tea Time Tuesday”. We read great literature and shared wonderful snacks. Although sweet snacks were high on the list of favorites, so were great healthy snacks too!
Cucumber sandwiches with Alpine Lace Deli Cheese and Ham and Alpine Lace Deli Cheese rolls were our favorite snacks for our “Tea Time Tuesday”. Did you know that most varieties of Alpine Lace® Deli Cheese are reduced fat, perfect for snacking on the go or adding delicious flavor to your favorite sandwich. Even though my daughter has now graduated from college and I no longer have youth organizations to run to, I still have an active life! I sew, quilt, garden and more! You will often find me out searching for the perfect antique for my home. I make sure I pack up a few of these great Cucumber and Alpine Lace Deli Cheese sandwiches! They keep me going on a long day.
To make the sandwiches all you need is:
- Sturdy bread (I used white, but I have also tried wheat and rye)
- Low Fat Cream Cheese
- Alpine Lace Deli Cheese
- English Cucumbers
- Spread low fat cream cheese on the white bread (about 1/4 inch thick)
- Slice your English Cucumber and place a few slices on top of the cream cheese
- Top with Alpine Lace Deli Cheese
