Lemon no bake cheesecake is perfect for your next brunch or any get together for that matter.
My family loves cheesecake, but I don’t always want to take the time to cook one from scratch. I don’t know about you, but I am a bit of a perfectionist and if the cheesecake doesn’t come out perfect (with no cracks) I am a not a happy baker.
This no bake cheesecake is also a no fail cheesecake. Here are a few great things about this dessert:

LEMON NO BAKE CHEESECAKE
I make my own pie crust, but you can easily purchase one. I will say this, making your own is easy and it really does taste so much better. Using organic graham crackers and real butter makes me feel better about this dessert.
Using real whipping cream in this recipe is a little different than the way I used to make my no bake cheesecakes. I used a whipped topping that was purchased in the freezer section. One of my most popular recipes is for No bake Blueberry Cheesecake. You will see the recipe is not much different.
Now that I eat real and clean food, I choose to not go that route. It will only take a couple of minutes to make the whipped cream from scratch and the difference in taste is well worth it.
In order to get the wonderful and bright lemon flavor to this cheesecake, I use Nielsen-Massy extracts. My touch of sweetness comes from Dixie Crystal sugar.
Lemon No bake Cheesecake
Lemon no bake cheesecake is so easy to make. Tastes so good
- 1 8 ounce package of cream cheese softened
- 1 cup heavy whipping cream
- 1 TBL Lemon extract I use Nielson-Massey
- 1 sleeve of graham crackers
- 1/4 cup butter melted
- 4 TBL sugar divided, I use Dixie Crystal
Place the graham crackers in a zip top bag and then crush them using a rolling pin.
Place butter in a medium microwavable safe bowl and microwave for about 30 seconds or until butter is melted. Add the crushed graham crackers and mix well.
Place the graham cracker mixture in a pie pan and press up the sides and on the bottom.
Place the cream cheese in a mixer bowl. Beat until light and fluffy - about 2 minutes. Add the lemon extract and 2 TBL sugar and beat a minute more.
Pour the heavy whipping cream and 2 TBL of sugar in a bowl and whip until light and fluffy. A peak should form.
Add the cream cheese to the whipped cream and blend.
Spread the cream cheese mixture on top of the graham cracker crust. Top with sliced strawberries or serve as is
