Health benefits of carrots:
- Prevent Cancer
Researchers have isolated a compound called falcarinol in carrots that may be largely responsible for anti-cancer benefits.
- Improve Vision
I think all of us had our Mom’s tell us this. Well, it is true. The retina of the eye needs vitamin A to function. Carrots are rich in beta-carotene, a substance which is converted to vitamin A in the liver.

Studies shown that a diet high in carotenoids are associated with a lower risk of heart disease.
- Reduce the risk of stroke
According to a research from Harvard University, people who ate more than six carrots a week are much less likely to suffer a stroke than those who ate only one carrot a month or more.
Carrots contain a lot of beta-carotene, which helps slow down the aging of cells and various negative effect associated with aging.
- Dental Health
Carrots can also help clean your teeth after meals. This is a new piece of information to me. A great reason to grab a fresh carrot after a meal.
In order to keep this a quick and easy recipe, make sure you use the right tools. I use a mandolin to slice my carrots. This not only makes the slicing process go faster, it also slices the carrots evenly for perfect cooking.
