Easy creamed corn is the perfect side to most any recipe.
This recipe is so easy and quick and versatile too. I used fresh corn from the Farmer’s Market, but you could also use frozen corn.
Purchasing produce from the Farmer’s Market is one of my favorite things to do. I love walking up and down the isles at the market and seeing what the farmers have brought. First, I look at each stall, making note of what looks good. Once I have seen everything, I head back to the stalls that carry the best looking produce at the price that is good for me.
We recently purchased a bushel of corn from the market. Do you know how many ears of corn are in a bushel? About 45!
We came home that day and shucked and froze corn. It took about 4 hours to freeze all of it, but it will be worth it when the cold weather strikes and my family is craving fresh corn.
Needless to say, I have a lot of corn recipes. This easy creamed corn recipe is one of my families favorites. This side dish goes with most any meal.
Corn has many health benefits. Here are a few:

- Rich in Vitamin B, Thiamin and Niacin
- High in Antioxidants
Easy Creamed Corn
Easy Creamed Corn made with cream cheese
Easy creamed corn recipe that is a great side for any dish.
- 4 cups fresh corn off the cob (Can use frozen)
- 1/2 cup whole milk
- 4 ounces cream cheese cubed
- 2 - 4 TBL Fresh chopped chives
- Salt and pepper to taste
In a medium saucepan, heat milk at low to medium heat. Add corn and cook till the corn is tender. About 5 - 7 minutes
Remove from heat and stir in the cream cheese. Stir until the cream cheese melts and mixes with the milk/corn mixture. Add salt and pepper to taste.
Top with chives.
If you want the creamed corn to be a little thicker, add more cream cheese. I typically used about 6 ounces.
