Happy 1st of October everyone!
I love October, not only because of Halloween, but because of the cooler weather and the changing of the leaves. I think it is a great month!
I had a wonderful weekend and hope you did too. Our trip to the State Fair on Saturday was great fun. Sunday was a good day too! Ran a couple errands and got some sewing done.
We had the best desert last night! Caramel Apple Parfaits. Here is the recipe:

2 Tablespoons butter
2 cooking applies, cored and sliced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
4 cups vanilla ice cream
1 cup prepared hot caramel topping
In a large skillet, melt butter over medium heat. Add apples; cook until tender and lightly browned, 8 to 10 minutes. Stir in cinnamon and allspice. Remove from heat.
Heat caramel topping according to package directions. Layer ice cream, apple and caramel sauce in 4 glasses or bowls. We made 2 layers in tall glasses.
This parfait tastes like apple pie without the crust! I think a good addition would be crumbled ginger snaps!
