The holidays are fast approaching and I am on high speed mode. No matter how busy I am, I still want to make sure I get a great tasting meal on the table for my family every night.
My family enjoys fish and I serve it at least once a week. Fish is high in protein and that is really important to me. I enjoy knowing that my family is eating a great tasting meal that will keep them full for a long time.
While I was out grocery shopping, I found Bumble Bee SuperFresh® Tilapia with garlic and extra virgin olive oil. Never has it been so easy and delicious to enjoy a delicious Premium Tilapia fillet! Bumble Bee SuperFresh®Tilapia has ground black pepper, fresh garlic, sea salt and extra olive oil – making every flaky bite fantastic!
I knew that this would be a flavor my family would love, so I picked up a package. I knew that I could easily add a couple of healthy sides and have a gourmet dinner on the table in no time!
I wanted to keep this meal light tasting and make sure that I showcased the flavor of the tilapia. I decided on making double sesame rice and baby bok choy salad. I knew the rice would let the fish shine and the salad would have a bit of savory and sweet in it – that is always a flavor my family loves.
The double sesame rice is so easy to make and yet it tastes like it was made in a 4 star restaurant.
Double sesame rice is easy and goes great with Bumble Bee SuperFresh® – here is how:
- 2 Teaspoons dark sesame oil
- 1 teaspoon toasted sesame seeds
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups of white rice (1 cup raw and 2 cups water)
- When rice is cooked, add other ingredients, mix well and serve
I added a Baby Bok Choy salad to the meal and was happy with the outcome. The salad is easy to make and uses some of my families favorite ingredients. I was excited to try out the baby bok choy – they are so cute. I decided to not use a salad dressing on the salad for a couple reasons. I wanted the sweet of the apple and the carrot to compliment the peppery flavor of the bok choy.
The baby bok choy salad took me about 15 minutes to make. Here is how:
- 4 – 5 heads baby bok choy
- 1 apple, cut into matchsticks
- 1 or 2 carrots, cut into matchsticks
- Course Salt and ground pepper to taste
- Halve the bok choy and rinse well. Cut crosswise into thin strips.
- In a serving bowl, mix apple, carrot, bok choy, salt and pepper.
This meal was the perfect combination of flavors. The tilapia with garlic and extra virgin olive oil was light and full of flavor. I really enjoyed the fact that the garlic was not to strong.
