I am not fond of a big breakfast. I am good with granola, a piece of toast, or Malt-O-Meal in the winter. Big, on the other hand, is a lover of Big breakfast. Bacon, eggs, pancakes, waffles, sausage, toast are all favorite breakfast items on Big’s list.
Since Big will be out of town for the week, I decided I would make a special breakfast and that meant waffles would be on the menu!
I decided to go straight to Pinterest and find a great recipe. Here is what I found.
The Very Best Waffles
adapted from Buns in my Oven
3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg (I grated my own!)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup buttermilk
1/4 cup milk
6 tablespoons vegetable oil
1 large egg, separated
1 tablespoon sugar
1/2 teaspoon vanilla extract
Heat the oven to 200 F and heat up waffle iron.
Mix the flour, cornstarch, salt, cinnamon, nutmeg, baking powder, and baking soda in a medium bowl.
In another bowl, mix the buttermilk, milk, and vegetable oil. Stir in the egg yolk and set aside.
In another bowl, beat the egg white to form soft peaks. Sprinkle in the sugar and continue to beat until the peaks are firm and glossy. Beat in the vanilla.
Pour the buttermilk mixture into the dry ingredients and whisk until just mixed. Drop the whipped egg white mixture onto the batter in dollops and fold in with a spatula until just incorporated.
Pour the batter onto the hot waffle iron and cook until the waffle is crisp and brown.
Set the waffle directly on the oven rack to keep it warm and crisp. Repeat with the remaining batter. When all the waffles are cooked, serve immediately.
** I was doing a lot of chatting while I made the recipe and forgot the whipping of the egg whites. My waffles didn’t come out as fluffy as the originals did, but they were great none the less!
The flavor was wonderful and the spices mixed well with the maple syrup. I know I will make them again and the next time, I will keep my eyes on the recipe and my mouth shut!

One last thing – I found Candy Corn Oreo cookies at Target! They smell wonderful and taste even better. My understanding is that Target will be the only store to carry them. If you can find them, try them! You will not regret it.
