I am sure many of you have seen Surprise Recipes Swaps on the Internet before, but just in case you haven’t, let me explain it. Jutta, our host, picks partners each month. She tells us which blog to head over to. You never know who is in the club and you never know who you will partnered with! That is part of the fun! To me, the most fun is searching through your partner’s blog and finding the recipe that makes you shout, “That’s the one!”
This month, I was paired up with DJ’s Sugar Shack! If you love sweets, then you need to head over there now! Well, wait until you finish reading this and then head on over. DJ’s Sugar Shack is filled with so many wonderful, sugary, delicious recipes. I was drooling within the first few minutes of visiting her lovely site.
It was hard to decide on a recipe, but I finally picked Red Velvet Cupcakes. Big is fond of Red Velvet, so I knew this recipe would be a winner.

Here is the recipe:
Red Velvet Cupcakes
Adapted from DJ’s Sugar Shack
Prep Time: 20 minutes
Cook Time: 20 minutes
For the cupcakes:
3/4 cup unsalted butter, softened
1 cup sugar
2 large eggs
2 1/2 Tablespoons red food coloring (*see note)
1 1/2 Tablespoons cocoa powder (*see note)
1 1/2 cups cake flour
3/4 cup buttermilk
1 teaspoon vinegar
3/4 teaspoon baking soda
*I used Lorann Flavoring Red Velvet emulsion instead of the food coloring and cocoa
For the Frosting
8 oz cream cheese
1 stick unsalted butter
1 Tablespoon vanilla
4 – 5 cups powdered sugar
For the cupcakes
-Preheat oven to 350 degrees F. Line cupcake tin with 12 liners
-In an electric mixer, cream the butter and sugar until light and fluffy.
-Beat in the eggs, one at a time, until well blended.
-In a separate bowl, mix the food coloring and cocoa powder until a paste is formed. (If you use the emulsion, add the amount suggested on the bottle)
-Add the paste (or emulsion) to the butter mixture, and mix well.
-Add the buttermilk and blend well. Add the flour and mix until smooth.
-In a separate bowl, mix the vinegar and baking soda together and add to the batter. Mix until ingredients are fully incorporated.
-Spoon batter into lined cupcake pan.
-Bake for 10 minutes; rotate and bake for an additional 10 minutes or until a toothpick inserted in the center comes out clean.
-Cool completely on a wire rack
-In the bowl of a stand mixer, mix the cream cheese and butter together until smooth.
-Add the vanilla
-Add the powdered sugar, one cup at a time and mix until fully incorporated.
When your cupcakes are completely cool, ice them to your preference! Then eat them!
