Menu Plan Monday #11 is all about Spring meals. I love this time of the year, don’t you? The weather warms up and I can get outside in the garden and get my hands in the dirt! I do my best to spend a few hours every morning in my flower and vegetable beds.
It has been a very busy week around here! If you follow Feeding Big, you know we had a flood in our basement last week. The flood has caused a lot more work than I ever though! I hope I never have to go through something like this again.
I hope you all had a wonderful Mother’s Day. My sweet daughter came over early in the morning and brought me coffee in bed. Then she made a wonderful breakfast burrito. I guided her a little on how to cook the bacon for the burrito. She is a vegetarian and has never cooked bacon! She is such as sweetheart! We had a wonderful day. I would love to hear about your day!
Here is my menu plan for the week:
Tuesday: Ginger Scallion Chicken Wings, Tater Tots, Corn on the Cob
Wednesday: Grilled Hamburgers, French Fries, Asian Watermelon Salad
Thursday: Grilled Tilapia with Mango Salsa
Friday: Huevos Rancheros
Saturday: Sloppy Joe’s in the Slow Cooker, carrot and celery sticks
Sunday: Roasted Turkey Breast, Baked Potato and Brocolli
