It is Monday again and that means time for Menu Plan Monday #55. I woke up this morning and was happily surprised by a chill in the air. It is getting closer to Fall and that means it is getting closer to heating up the oven and pulling out the slow cooker.
Summer is wonderful and I love grilling, but cooler weather means comfort food. I just love creamy casseroles topped with a lot of cheese. Soups and stews rank on the top of the list too.
Making different types of soup in the winter is fun for me. I remember when Big used to think that soup wasn’t enough for a meal. That has quickly changed as I have found recipe for soups that are hearty and full of meats and vegetables. They certainly are not Chicken Noodle from a can!
This week I have a couple comfort foods listed. The whole week is not full of them because the temperature will still rise into the upper 80’s. I don’t want to get tired of them too soon.
Here is my Menu Plan Monday #55
Monday: Pasta with sautéed zucchini, onion, eggplant (Meatless Monday)
Tuesday: Southwestern Rice and Beef Casserole, green salad
Wednesday: Tacos, rice, beans
Thursday: Grilled Corn Chowder, cornbread muffins
Friday: Tilapia with Raspberry Chipotle Sauce, green beans, rice (a $5.00 meal)
Saturday: Homemade Pizza
Sunday: Pot roast, oven roasted potatoes and carrots, Buttermilk Pie
