Menu Plan Monday #47. I hope you had a wonderful 4th of July weekend. I know I did. I was really worried that our local fireworks show would be rained out. We woke up to clouds and they kept the sun away for most of the day. Then, all of a sudden, the sun came out and I knew the fireworks would be on. I just love watching fireworks, don’t you?
Heat and humidity has kept me in the house most of the past few weeks. I do get in the garden for an hour or so early in the morning. I am not a person who can stand being in the sun very much. We have a couple of 4 X 4 vegetable beds this year. In one of them I have jalapeños and tomatoes, the other contains parsley and cilantro. I have some purple sage and purple basil growing in my flower beds (keeps the bugs away and looks pretty too!). I made some fresh salad for the 4th and we sure did enjoy snacking on it while watching the fireworks.
This week, I will be finishing up some house projects. I started painting my den and just haven’t gotten around to finishing it. Crazy right?

Monday: Grilled Vegetable Fritatta, french bread
Tuesday: Eat at neighbors house
Wednesday: Grilled chicken, greek pasta salad, corn on the cob
Friday: Hot dogs, potato salad, baked beans
Saturday: Nachos with hamburger
