Menu Plan Monday #46. Where did the week go? Where did the school year go? I know many of you are already busy with your summer activities. Children are out of school and wanting to keep busy and eat! Boy, can young ones eat!
One of my daughter’s favorite treats during the summer was homemade cheese it and fresh fruit! I don’t think I could have enough fresh fruit for her. Don’t get me wrong, I love the fact that she loved fresh fruit then and still does!
This week’s menu is full of great recipe that are easy and frugal. As you know, I am cutting my grocery budget and stashing the extra money away for retirement! One are that I have control over is my grocery budget. So, many of my recipes fit in my new $5.00 meal budget. In order to keep my evening meals in the $5.00 arena, I keep my protein around $2.50 a pound and split the rest of the $2.50 between grains, vegetables and fruit.

Monday: Grilled Tilapia, Broccoli Bacon Salad,
Tuesday: Cheese Tortellini Primavera (a $5.00 meal)
Wednesday: BBQ Pork Ribs with Strawberry Chipotle Sauce, Corn on the Cob,
Thursday: Black Bean Quesadillas, homemade pico de gallo
Friday: Broccoli, Feta and Alfredo Pizza
Sunday: Roast Chicken, Summer Squash Casserole,
