I hope you all had a wonderful Mother’s Day! Mine was spent with my beautiful daughter and then off to the nursery to purchase flowers for my garden! What could be more perfect? Well, in my mind that makes a pretty great day!
This week will be a pretty busy one. My Mother will fly in next week for my daughter’s birthday. My Mom has never missed one of my daughter’s birthdays. While my Mom is here, we will tour some of the local attractions and also relax a little. So, I will be busy writing post, running errands and getting ready.
My menu this week will be pretty simple, I don’t want to spend a lot of time in the kitchen!
Monday: Grilled Chicken, almond sesame quinoa
Tuesday: Cream of Asparagus Soup with french bread
Wednesday: Grilled Tilapia with Mango Salsa, rice, chips
Thursday: Garden salad with leftover grilled chicken
Friday: Grilled cheese, chips, veggie sticks, french onion dip
Sunday: Pot Roast in the slow cooker, potatoes, carrots
What are you having for dinner this week?
For breakfast we usually have oatmeal, cereal, toast or a granola parfait. Lunch will often consist of salads and sandwiches during the warm weather. I like to eat light when it is warm.
