Hi there and welcome back to another Menu Plan Monday! How has your week been?
We have had a lot of snow, ice and cold this last week. I know many of you had children home from school and you probably stayed pretty busy keeping them occupied! Meal Planning is a great idea for busy Moms! I know when my daughter was younger, planning meals is what kept us sane. Running from one event to the next was fun, but certainly didn’t leave much time to remember what to pull out of the freezer each morning!
Soups, stews and comfort foods wet on the menu again this week. There is something nice about a big bowl of chili or soup when you come in from shoveling snow!
Here are the dinners that are on my menu this week:
Tuesday: Split Pea soup, french bread
Wednesday: Healthy Shepherds Pie, breadsticks, green salad
Thursday: Chili Made with Stew Meat (Slow Cooker), corn bread
Friday: Baked Cod with Lemon Parsley Sauce, broccoli, jasmine rice
Saturday: Hot dogs, cole slaw, chips
Sunday: Roast Chicken, Mashed Potatoes, green beans
I hope you enjoyed this weeks menu. I am pretty excited about it. The Chili makes a large pot, so I can freeze some for another day. I love making dishes like that. Cook one time – serve twice!
