I am happy to say that we have about 18 pounds of turkey left from out Thanksgiving meal. We immediately cut the meat off the carcass and store it in the refrigerator for a few days. Then we divide it up into portions, label it and freeze it for the best leftover meals ever!
A few of the meals I am thinking about this year are:
Chicken Salad with Black Beans and Avocado from Kalyn’s Kitchen (Substitute Turkey!)
I worry about storing my extras. Recently Dr. Oz talked about the safety of leftovers. He had a great video HERE. With this information in mind, I decided to do some searching about safe containers.
One great storage system is the Ozeri INSTAVAC Green Earth Food Storage System. This great system is BPA free and has a vacuum system that reduced the growth of bacteria. I just love these! They are stain resistant, shatter proof and can go in the microwave.
I was able to store 20 pounds of turkey in the large container and then I used the smaller containers for stuffing, potatoes and corn! What you don’t see is the cookies I have hidden away in the freezer!
