Grilled cajun chicken is so delicious.
My family loves having a bit of heat to their food. So, you will find Cajun dishes on my menu often. We recently had a recipe for Cajun shrimp that was to die for. The whole meal was made on a large sheet pan and was so easy to clean up. I know it will be something we have again and again.
Removing the skin and the bone from the chicken thighs makes the chicken less fat and a healthier choice. We love chicken thighs because they are always so tender and moist. I realize they may contain a little more fat, but without the skin on the thigh, I don’t worry about it too much.
GRILLED CAJUN CHICKEN
Grilled Cajun Chicken thighs are good for:

This cajun chicken recipe is so easy and I love how quickly the thighs cook. I was recently given a package of Smokin-Os to try out. I was super excited to see how they would work.
The smoked flavor that the Smoking-Os added was just perfect. I really love that the company uses 100% repurposed orchard and hardwood trees and has no binders or fillers in it. I enjoy working with a company that has the same values as I do.
I made about 10 grilled cajun chicken thighs at the same time. We froze a few (they are perfect from freezing) and then used them for various meals.

Grilled Cajun Chicken
Easy to make and so many uses. Grill a big batch and freeze the leftovers for a busy night.
- 3 TBL Paprika
- 2 tsp Salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 2 tsp black pepper
- 1 tsp red chili powder
- 1 tsp dried oregano
- 4 boneless, skinless chicken thighs
- 4 TBL Butter
Mix all of the spices and herbs in a small bowl. Rub the chicken thighs with about 1/2 of the mixture. Place the chicken in the refrigerator for about 30 minutes.
Heat the grill to about 300 Degrees.
Melt the butter in a small microwavable dish. When the butter is melted, add the remaining spices.
Place the chicken on the grill and brush some of the spicy butter on it. Grill for about 10 minutes and then flip the thigh. Brush on more of the cajun butter and cook another 10 minutes or until a meat thermometer reads 165.
***Please note: The sodium count in this recipe is very high. This is from the amount of salt in the recipe for the spices. Please remember that you will not use all of the spices, therefore the sodium count will be much less.
