Warm weather is here and, for my family, that means picnics, grilling and eating outside. We are lucky enough to have a wonderful sun room that is perfect for dining outside. Fruits, veggies and fish are often on the menu.
Not too many years ago, we lived in Miami. There were so many things about living in Florida that we loved. I think my daughter’s favorite thing was being able to go to the beach on Christmas Day. She was so happy to lay in the sun and then send photos to her friends and family that lived in states that had snow.
My favorite thing about living in Florida was the abundance of fresh fruit and seafood. Can you believe that we went strawberry picking in December? We learned to enjoy fresh fruit all year long while living in Miami.
Imagine my delight when when I head to the grocery store and I see Florida strawberries, blueberries, watermelon and seafood. I always pick them over anything else I see in the store and head home to make a meal I know my family will love. While enjoying the recipes I made with my delicious finds, we spend time around the table recalling our fondest memories of Florida and all of the great foods we ate and all of the great adventures we had.
Fruit salad with watermelon, strawberries and blueberries is a family favorite. It is easy to put together and full of sunshine, just like the state of Florida. The dressing give the salad a bit of a tang that makes the flavor of the fruits come alive in your mouth.
- 1/4 cup orange juice
- 1 TBL lime juice
- 1 TBL Honey
- 2 cups watermelon, cubed
- 1 cup blueberries
- 1 cup strawberries
- Mix the orange juice, lime juice and honey in a small bowl. Set aside.
- In a larger bowl, add the watermelon, blueberries and strawberries. Top with the orange juice mixture and mix.
- Store in the refrigerator until ready to serve.
The next time you are in the store, make sure you look for fresh fruit from Florida. You won’t regret it. Not only does the fruit taste wonderful, it is good for you too. We always have blueberries, watermelon and strawberries in our refrigerator during the summer.
