When I was younger, I can remember my Mother using the canned cream of mushroom soup in so many dishes. I loved each and every one of them.
Now that I am grown and cooking food that is cleaner and without preservatives, I knew that I wanted to create a creamy mushroom soup from scratch.
This soup is so easy to make and really only takes a short while to make. I have made it during the day and served it that night with great results. Leftovers are really good too. I think the flavor intensifies and the earthy taste of the mushrooms is more profound.
Creamy Mushroom Soup, a clean eating recipe
Creamy mushroom soup is a flavorful soup for lunch or dinner. Easy to make and healthy.
- 1 pound Cremini mushrooms thinly sliced
- 1 onion chopped
- 2 sticks of celery diced
- 3 cloves of garlic chopped
- 1/2 tsp dried thyme
- 1/4 cup butter
- 4 cups organic chicken stock
- 1 cup heavy cream
- Salt and pepper to taste
Wipe the mushrooms with a soft cloth to get any dirt off of them, before slicing.
In a large stock pot, melt the butter.
Add the onions and celery, cook about 5 minutes stirring occasionally.
Add the mushrooms, garlic and thyme and cook about 5 - 6 minutes or until tender.
Remove a large spoonful of the mushroom mixture and set aside. Chop when cool.
Stir in chicken broth and add salt and pepper to taste. Bring to a boil and then lower to a simmer and cook about 10 minutes.
Using a stick blender, blend until the mushrooms are chopped up. You don't have to blend them all, you can leave some in slices. If you don't have an immersion blender, place some of it in a blender and blend for a minute or so. Please let the soup cool before blending.
When the mushrooms have been blended. Add the heavy cream and salt and pepper to taste. Let the soup slowly heat - do not boil
Top the soup with the chopped mushrooms.
This creamy mushroom soup goes well with a grilled cheese sandwich! To me, mushroom soup is comfort food. Hot, creamy and delicious.

If you are vegetarian or looking for a vegetarian soup, I would substitute the chicken broth for an organic vegetable broth. You may need to adjust the salt and pepper a little, but I think that would be the only adjustment.
