As Big and I age and get closer and closer to retirement, we realize how very important it is that we eat as healthy as possible. After all, we want to make sure that we can crawl around on the floor with those future grandchildren.
When my daughter was young and living at home, we were like so many other families. We were always on the run going from one event or group to the next. I homeschooled my daughter and I used to joke and say that we car schooled because we were on the road so very much.
One thing that was a constant in our home, was that we ate at the dinner table every night. At times, we may have eaten at 8:00 p.m., which was super late, but we always ate together. Eating together at the dinner table is so important. Dinner time is a time when we would slow down and share the ups and downs of our day. It was a time for us to reconnect. It was also a time that I knew I could make healthy choices for my family.
My baby is grown and out of the house now, but Big and I still sit at the dinner table each night. We still share our ups and downs and take the time to reconnect and begin to wind down from busy days.
Since it is just the two of us now, at times, I don’t want to prepare a large meal. I do want to make sure that we eat healthy. That is where Healthy Choice Simply Cafe Steamers or Healthy Choice Cafe Steamers come in. I keep a few of our favorites in the freezer at all times.
Healthy Choice meals provide Big and I nearly a dozen delicious, healthy options. I know that we will get great meals with crisp vegetables and juicy proteins in them.
A couple of the things I really love about these meals is that they are made with real ingredients and there are no preservatives. The meals are steamed in a bowl that keeps the sauce at the bottom, the keeps the vegetables fresh. Big and I enjoy the fact that we can add as much sauce to our meal as we want. I love a good saucy dish and Big would rather not have a lot of sauce.
I often will make a small salad to go with out meals. One of our favorites to eat with Asian foods is Baby Bok Choy salad with Mandarins. Here is a tip – don’t add the mandarins and dressing until you are ready to eat the salad. I can quickly make the salad earlier in the day when I have about 10 minutes and it is still crisp and fresh when we sit down for dinner.
- 3 - 4 Baby Bok Choy, washed well and sliced
- 1 cup Spinach, torn
- 1/2 cup mandarin oranges (from a can, drained)
- 2 TBL almonds
- Ginger dressing (I use a purchased dressing)
- Cut the baby bok chop horizontally and wash well. Tear or cut the spinach and place both in a medium sized serving bowl. Top with mandarin oranges and almonds.
- Serve with Ginger dressing
