Around The World in 80 Sundays
Spicy Pork Stir Fry
Prep Time – 45 min.
Cook Time – 15 min
Serves 4
Ingredients:
Marindade:
2 Tablespoons Soy Sauce
1 Tablespoon Cornstarch
1 Tablespoon Water
1 pound pork tenderloin, thinly sliced*
Lime Mixture:
1 lime, juiced
1 Tablespoons Soy Sauce
2 Tablespoons Rice Vinegar
1 teaspoon cornstarch
3 teaspoons dark sesame oil
Stir Fry:
1 Tablespoon peanut oil (I used sunflower)
3 teaspoons minced ginger root
2 green chile peppers, chopped (I used jalapeno)
1/2 cup julienned carrots
1/2 cup sugar snap peas
2 teaspoons chili oil
1/4 cup chopped green onions
1/4 cup finely chopped peanuts.
Directions:
In a medium bowl, combine 2 Tablespoons Soy Sauce, 1 tablespoon cornstarch and water. Mix all together until smooth and stir in the pork slices (* if you freeze the pork for about 10 minutes, it will make the pork firm and easier to slice). Cover and refrigerate for 30 – 45 minutes.
In a small bowl, combine the lime juice, 1 tablespoon soy sauce, rice vinegar, 1 teaspoon cornstarch and sesame oil. Mix together and set aside.
Remove pork and marinade from refrigerator. In a large skillet or wok, heat peanut oil until hot. Stir in ginger and chile pepper and saute for 1 minute. Then stir in pork with marinade, carrots and sugar snap peas. Stir-fry for 6 – 8 minutes or until pork is tender.
Pour in the lime mixture. Reduce heat and simmer until sauce thickens, about 6 – 8 minutes. Remove from heat and stir in hot chile oil, green onions and peanuts.
Serve with rice. We like Jasmine rice. Enjoy!
I would love it if you would come back next week and see what country I land in next!

What a great idea Cynthia. Looking forward to your culinary journey around the world. Can’t wait to see what you can do with Vegemite on your Australian stop over, lol!!!
Love this idea Cynthia. Im looking forward to seeing what culinary delights you decide to cook.
Ignore Marg …or dare her to make something with Vegemite. She hates the stuff!
This is the best idea I have seen on a blog in a really long time! Just wish I could cook as good as you!
Sorry to hear you’re closing down the other Blog. I understand, though, you need to follow your bliss
I’ve officially followed you over here now…..even if looking at all the food ( I’m low carb/ no sugar) taunts me….haha!
Big looks like she eats very well!! ;P
Such a great idea, Cynthia! Food, fun, and educational all in one!
Your recipe looks amazing – definitely going to try it with some beef, since we don’t eat pork.
Looking forward to your next stop!
I love the idea of your new series! We get to “travel” along with you. And I love love stir fry, so I’ll have to pin this recipe to remember it! Thanks for sharing!

Around the World in 80 Sundays is a great idea. I am not as adventurous an eater as you, so maybe you will entice me.
Great idea. Will take you to lots of places over the next year and 3/4. Are you going to have guest bloggers participate? Just wondering. Thanks for sharing
I love Thai Food! Very similar to the Filipino food my friends have me hooked on.
I always shy away from Thai food because it seems like the ingredient lists are all a mile long but this one isn’t too bad! Maybe I can convince my husband that a night off from steak and potatoes is in order!
What a great idea and your spicy pork looks delicious!
What an awesome idea! Looks and sounds yummy. Can’t wait to see your next country.:) Thanks for linking up to Inspire Me Wednesday!
I love Asian food! This dish looks fabulous! What a great recipe to share at Foodie Friends Friday.
