If you have read my blog before, you know that we belong to a CSA (Community Supported Agriculture). We pay a farmer a fee at the beginning of the growing season and receive fresh vegetables all summer long.
Our CSA includes a Fall pickup and a Christmas Tree pickup. I am excited about the fall pickup. We will be getting dried cornstalks, pumpkins and fall squash.
We received an over abundance of corn this year. I would venture to guess we shucked about 200 ears of corn this summer!
As you can guess, we were always on the search for recipes with corn.

I love canning, so when I saw the magazine, “Better Homes and Garden Canning,” I decided I must have it. Am I glad I did! I have used many of the recipes.
This is one of our favorites.
Farmer’s Market Corn Salsa
Adapted from Better Homes and Gardens Canning
Prep – 35 min.
Cook – 10 minutes
process: 15 minutes
4 large fresh ears of corn
1 cup coarsely chopped onion (1 large)
1 cup coarsely chopped green or red sweet pepper
1 cup chopped, peeled tomato
1 fresh jalapeno chile pepper, seeded and finely chopped *
1/2 cup lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
Remove husks from ears of corn. Scrub corn with a stiff vegetable brush to remove silks; rinse. Cut kernels from bobs (Do Not Scrape) Mesure 2 cups of corn kernels.
In a large saucepan, combine the 2 cups corn kernels, onion, sweet pepper, tomato, jalapeno pepper, lime juice, salt, cumin and black pepper. Bring to a boil. Reduce heat. Simmer, covered, for 10 minutes.
Ladle hot salsa into hot, sterilized half-pint canning jars, leaving a 1/2 inch headspace. Wipe jar rims; adjust list.
Process filled jars in a boiling-water canner for 15 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.
Makes about 4 half-pint jars.
* I used 2 jalapenos and added a little of a habanero pepper I had! I love it hot!
This is a great salsa. I have used it with chips and also on grilled chicken! I think there could be many uses.
