I usually post about Feeding Big. This week Big is out of town and my daughter, The Baby, just left for her senior year of college.
That leaves me.
My normal dinner is whatever catches my eye in the refrigerator or freezer. We always have leftovers in the freezer and they often become a meal for me when I am alone.
No more. I am joining the large amount of folks who cook for themselves. This will be a new, but enjoyable, adventure for me. Hope you will follow along.
In anticipation of being alone for almost a week, I picked up a cookbook called “Cooking for Yourself” from Williams-Sonoma. It is a great cookbook and I would suggest it for single cooks.
I was inspired by a recipe for a savory galette.
I recently participated in the Tuesday with Dorie challenge and had some dough for a galette left over. I had some zucchini, eggplant and onion in refrigerator, so I decided they would be the filling.
I chopped the veggies up (you could use any vegetables you have on hand) and sauteed them in a little olive oil. I added salt and pepper to taste.
While the vegetables were cooking, I rolled the dough out. When the dough was about 10 inches around I placed the cooked vegetables in the center and folded the dough toward the center.
I whisked an egg and used it as a wash for the edges of the galette.
The galette was baked for about 25 minutes in a 400 degree oven.

This was a quick, easy and tasty dinner. I even have enough for lunch tomorrow!
I think I will use some of my CSA vegetables for Mexican Soup tomorrow!
