Weekend meals have always been easy and fast in our house. Pizza, hot dogs, hamburgers and quesadillas top the list of favorite meals.
When it comes to quesadillas, plain cheese are our favorites. We love to dip them in a little sour cream and salsa. The hotter the better.
I think this veggie one comes in at a close second.
The ingredients? Flour tortillas, mexican cheese blend (or cheddar) and whatever vegetables are lurking the the drawer. We usually add a chopped jalapeno, but it is not necessary.

This week our quesadillas contained, corn, onion, zucchini, eggplant, and jalapeno. I saute the mixture in a little olive oil.

I am too lazy to get a clean pan when the veggies are done. After scraping the vegetable mixture into a bowl, I plop the tortilla in the pan, add the cheese and vegetables and heat till the cheese starts to melt. Fold the tortilla in half. Cook till the cheese gets nice and melty and the tortilla is golden brown.

That is all there is to it. I know many of you have made these before. Perhaps this is a reminder to add it to your menu soon. Easy, not a lot of mess and pretty darn tasty.

Love quesadillas, I usually use grated zucchini, corn, capsicum, cilantro and some salsa to bind it together, I don’t always cook the filling first though depending on the ingredients I use.
