Ingredients for Cajun Spice Blend
- 1/4 cup Kosher salt
- 1/4 cup cayenne
- 1/4 cup paprika
- 1/4 cup garlic powder
- 1/4 cup ground black pepper
- 2 tablespoons onion powder
- 2 tablespoons oregano, dry
- 2 tablespoons thyme, dry
Mix all of the ingredients in a jar and seal.
Blackened Fish
8 – 10 Tablespoons of Cajun Spice Blend
4 – 6 Pieces of Fish (Catfish, Tilapia, redfish, whatever you have)
1/2 cup (1 stick) butter
Place an oven safe platter or dish in a 250 degree oven to keep it warm.

Heat a large, cast iron skillet over high heat for at least 6 – 8 minutes (yes, it will get really hot!).
Place 1/2 cup of butter in a microwavable dish. You will want to make sure the dish is big enough to dip your piece of fish in. Pop the dish in the microwave until the butter is melted.
Dip one piece of fish into the melted butter. Coat both sides.
Dredge fish in seasonings.
Put 1 tablespoon butter in the pan and let it melt.
Place the piece of fish into the hot skillet.
Pour a teaspoon of melted butter on the fish in the skillet.
Cook for about two minutes and then turn it over.
Place another teaspoon of melted butter onto this side of the fish.
Cook this side for another two minutes.
Remove fish from pan and place on the serving dish that has been warmed in the oven.
Repeat this process for each fillet.
Wipe the skillet out with a paper towel after cooking each fillet. This is an important step. You do not want to reuse the butter and spices that are left in the pan.
This may sound like a time consuming recipe, but it goes pretty quick once you get the hang of it.

Earlier in the day, I made sandwich rolls. I also whipped up a little tartar sauce.
We split the rolls open, smeared some tartar sauce on the rolls and added the blackened fish. Simple, yet delicious.

Mmm…I love a good fish sandwich (though I have to do a gluten free roll). I think I have used that very cajun spice recipe and it is delish. Looks like a winner to me!
